Ice Cream Cone Cupcakes!

Happy Easter! I have quite a busy bank holiday weekend ahead of me and have my whole family meeting up tomorrow for tea, so my little sister and I thought we would do a bit of baking for the occasion. We ended up making Ice Cream Cone Cupcakes and Easter Rice Krispie Cakes, so we definitely won't be short of chocolate this weekend. So much for cutting down...
I thought I'd share how we made the Ice Cream Cupcakes as they came out so well, they're a great alternative to ice cream when it's not quite warm enough!
You Will Need:
♥ 4oz Softened Margarine ♥ 4oz Caster Sugar ♥ 2 Medium Eggs ♥ 3oz Self Raising Flour ♥ 1oz Cocoa Powder ♥ Flat bottomed Ice Cream Cones ♥ Icing and Toppings of Your Choice ♥
Step 1:
Preheat your oven to 180°c/350°F/Gas Mark 4
Step 2:
Place the butter and sugar in a large bowl and beat together until light and fluffy, then gradually add the eggs.
Step 3:
Sift in the flour and cocoa powder and fold into the mixture.
Step 4:
Stand the cones in a muffin tin and wrap tin foil round them to keep them steady and crisp.
Step 5:
Spoon the mixture into the cones until they are about 2/3 full (I filled them up to the line).
Step 6:
Bake in the preheated oven for 15-20 minutes, or until well risen and firm to the touch. Transfer to a wire rack to cool, then decorate!
These were really fun to make and a lot easier than I thought they would be! Hopefully they will go down well with everyone tomorrow. Let me know if you're going to give these a go! Happy Easter.
